I, along with 2 other people are preparing content for a website that is already designed and tested, we plan to spend about a month populating the site with plenty of content so that when we launch the very first user of the site isn't looking into an empty room.

I am also busy gathering contact details of similar websites so that we can announce our launch to them to see if there is any common ground that we could work together on.

Is there anything else I should be doing to ensure that on whatever date we pick to hit the go live button everything runs as smoothly as possible?

You're on right track,good thing would be to use facebook or twitter to make bigger hype,or making small videos in camtasia which shows small portion of the website so people get interested more,make them again and again showing more and more small pieces of the cake that can make them very interested in your service,and don't forget it's best to not wait until every small detail is perfect,launch it in good phase but not perfect, after that you will get peoples opinions which will help you make it perfect. You can host some contest or giveaways on Twitter and Facebook before launching your website. It will also help to route traffic at your site and possibly users of your service.
